Theres just something about it, isnt there? A cheesy, hot, smoky thing that when you get near it, you cant step away, and if youre alone with it, and, say, a bag of Juanitas corn chips, things might get a little out of hand. Ive been there. No judgment.
Method: In a mixing bowl, stir together mayo, peppers, jalapeo pepper juice from the can, garlic powder, smoked paprika, red pepper flakes, liquid smoke, and salt. Fold in the cheese. Chill until ready to serve.
And the best part is you can make it a day or so in advance and bake it off later! I like to make it the night before and then have it ready to throw in the oven when guests start arriving. I like the bacon idea and will try that next time.

This recipe is wonderful! I did put the bacon on top and really liked it that way too. Next time I make it I am going to add 1/2 lb of hot cooked hot sausage and see what that is like! Great for carry-ins. Good hot or cold.
This dip was great! I made it for some friends and everyone loved it. I mixed the parmesan cheese in with the rest of the ingredients and then added a little more on top. This is my new favorite dip!

When the onions bake, they begin to caramelize. Add the flavors of cheddar and spicy jalapeo, what you end up with is a fantastic flavor trio that everyone will obsess over.
You can customize the amount of jalapeo in our baked cheddar jalapeo dip. Add more for extra spice or a little less for a mild version. What ever you decide, itll be a go-to and a party pleaser everyone will devour. And oh, this dip goes great with some ice cold beer for the adults and lemonade for the kiddos!
